Then I took out about 5 cups of frozen strawberry for the dessert later tonight. \u00a0We decided we are going to have dinner at around 6:30pm so I began the cooking at 4pm.<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Firstly, I took the chickens out of the brine and use paper towel to pad them dry. \u00a0Then I started\u00a0to\u00a0mix the rub for the chickens. \u00a0I used olive oil, sage, black pepper and poultry seasoning to rub onto the skin of the chickens. \u00a0I also chopped onions, carrots and potatoes to line the bottom of the baking pan then place the rubbed chickens on top. \u00a0Set the oven at 350\u00baF and bake the chickens for 45 minutes and then turn the pan around to get even cooking. \u00a0Let the chickens bake for another 45 minutes. \u00a0You know the chicken is done when you cut the chicken leg and the juices run clear.<\/p>\n<p><a href=\"http:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0226.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-238 size-large aligncenter\" src=\"http:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0226-1024x678.jpg\" alt=\"DSC_0226\" width=\"640\" height=\"424\" srcset=\"https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0226-1024x678.jpg 1024w, https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0226-300x199.jpg 300w, https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0226-1508x999.jpg 1508w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a> <a href=\"http:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0229.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-239 size-large aligncenter\" src=\"http:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0229-1024x678.jpg\" alt=\"DSC_0229\" width=\"640\" height=\"424\" srcset=\"https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0229-1024x678.jpg 1024w, https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0229-300x199.jpg 300w, https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0229-1508x999.jpg 1508w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>As for the rack of lamb, I started to cook them 20 minutes before the chicken is ready. \u00a0I also mixed my own rub with olive oil, salt, black pepper, rosemary and dried basil. \u00a0I put the rub mixture on all sides of the rack and pan fried them in a really hot pan under high heat for about 6 to 8 minutes on each side. \u00a0Once that is done, I put them into the oven and let them bake for another 10 minutes and it is done to medium rare to medium.<\/p>\n<p><a href=\"http:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0240.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-241 size-large aligncenter\" src=\"http:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0240-1024x678.jpg\" alt=\"DSC_0240\" width=\"640\" height=\"424\" srcset=\"https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0240-1024x678.jpg 1024w, https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0240-300x199.jpg 300w, https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0240-1508x999.jpg 1508w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a> <a href=\"http:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0239.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-240 size-large aligncenter\" src=\"http:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0239-1024x678.jpg\" alt=\"DSC_0239\" width=\"640\" height=\"424\" srcset=\"https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0239-1024x678.jpg 1024w, https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0239-300x199.jpg 300w, https:\/\/glittermommy.com\/wp-content\/uploads\/2014\/12\/DSC_0239-1508x999.jpg 1508w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>The dessert is even easier, 10 minutes before I serve them, I began to whip the cream to make them become whipped cream which takes about 10 minutes using a hand electric mixer. \u00a0Using a potato masher, I mashed the strawberries and added about 4 tbs of sugar. \u00a0Once those ingredients are prepped then we can assemble the dessert. \u00a0In a small parfait cup, put one layer of mashed strawberries then one layer of whipped cream and repeat one more time.
